Since then, he has tended the grandest bars in London - the private members' club, Home House; the Connaught Hotel; Rules, London's oldest restaurant; and 5 Hertford Street, Robin Birley's club in Mayfair. He currently manages the bar at Covent Garden's Balthazar, the hugely successful restaurant owned by the Londoner Keith McNally, named by the New York Times as `the restaurateur who invented Downtown.'
